Defiance Distillery’s ‘Gin Academy’ is an opportunity for you to learn about distilling and make your own unique bottle of gin. You will be given a tour of our distillery, learn about what goes into making our award-winning gins, and then have the opportunity to select your own botanicals and distill your own bottle of gin to take away. There’ll also be ample opportunity to sample some of our products throughout the afternoon.
Our Gin Academy currently runs on Saturday from 12pm to 2.45pm, subject to availability.
We can also offer bespoke private experiences. Please contact us if you would like to discuss this.
Our Gin Academy experience costs £89 per person.
This includes:
- Your own 500ml 40% unique botanical bottle.
- A welcome gin and tonic on arrival
- Gin cocktail midway
- Sharing platter of cheese and meats
- Gin and tonic to end
Each Gin Academy event lasts around 2.5 hours.
We currently have capacity for 6 people at a time to make a gin. Distillers can bring a friend for an additional £20 (payable on the day) for the three G&Ts.

No. We do not supply tickets or vouchers through the post.
No. The Gin Academy voucher is only valid for making a booking on one of our Gin Academy events.
You can reorder bottles of the gin you made, at a cost of £35 per bottle, including postage and packaging.
Simply email us with your BATCH number on your bottle and contact details and we will do the rest.
You must be 18 years of age, or older, to take part in the Gin Academy experience. We ask that you bring valid ID with you to the event.
We reserve the right to refuse entry to the Gin Academy to customers who appear to be under the influence of alcohol. You can read more about this, and our other policies, in our Terms & Conditions.
We release dates a minimum of two months prior to the date the experience takes place.

If you are within 14 days of your Gin Academy experience taking place then we will not be able to refund your booking under any circumstances.
If you have received a Gin Academy voucher, then you would make a booking as if you were making a full-price purchase.
- View our booking calendar and select your date.
- Add the Gin Academy to your basket.
- On the Basket page, you will have the option to add a “Gift Card Number”. Enter your unique 16-digit voucher code here and click “Apply”. Your total price should reflect the discount applied by the voucher.
- Continue to the Checkout and fill in your details. Once your order is processed you will be emailed confirmation of your booking.
The voucher is valid for six months from the date of purchase. This does not mean you have to attend a Gin Academy experience within six months. It means you must make your booking within six months of purchasing your voucher.

We design our drinks specifically for our experiences. We can provide tonic/light tonic, ginger ale or lemonade.
If you contact us 7 days prior to arrival and inform us that you can’t drink alcohol then we can help in providing alternatives.
